The celebration of the Independence of Haiti in 1804 marks the beginning of the history of pumpkin cream. Haitians collaborated to make a special soup on January 1 of that same year, to commemorate their liberation from French colonial rule. 

The French colonists maintained that the inhabitants of that country could never get together to do anything. To commemorate their fight for freedom, Haitians still prepare and serve traditional pumpkin cream known as “joumou” to friends and family.

The special meaning of pumpkin cream

The only food available to Haitians while under French colonial rule was bread soup. They have not been allowed to eat food containing pumpkins, meat broth, and other vegetables. This unusual soup was developed as a representation of cooperation in the face of adversity.

It was served to everyone at the first Independence Day celebration and is still being served today.

INGREDIENTS

  • Cut the pumpkin and remove the seeds, cook in water until soft, remove from the pot and reserve.

  • Heat the Nutrioli® oil and fry the onion and garlic until they are transparent. Add the cooked and chopped pumpkin; pour in the chicken broth and let it boil when this happens blend the soup and return to the pot, season with salt and pepper, and as soon as it boils, remove from the heat.

  • To make the croutons, take two slices of wholemeal box bread, remove the edges with a knife and flatten with a rolling pin, cut with a cookie cutter in the shape of a leaf, and arrange on a baking sheet. Bake for 10 minutes at 180 °C, or until they look golden brown.

  • Serve the soup with croutons and cream.
